
We’re ABC Farms, a Pune-based, homegrown brand that’s been crafting artisanal cheese and dairy products since the 80’s. Our focus is on quality, innovation, and sustainability – we use no harmful preservatives, and all our products are 100% vegetarian. We’re passionate about the environment, too – our farm practices include organic farming, composting, solar energy, and rainwater harvesting.
We produce over 40 varieties of cheese, plus farm-grown coffee, rice, millets, and other organic goodies, all grown on our farm just outside Pune using natural methods. Our experimentation with local climate and landscape lets us bring you top-quality crops and dairy, without compromises.
Urban Grow Lab, founded by Rohan and Stuti, has a very straightforward goal to alter the concrete landscape. Introducing control over nutrition, integration of city life with biodiverse ecosystems, and bringing together a local community.
We came together with similar objectives, advocating for natural and nutritious eating to force the shift into a more mindful future. Urban Grow Lab began this journey with us by transforming the brick plot facing the ABC Farms dairy into a lush garden space. This is where we grow a lot of our exciting produce, like malabar spinach, black cayenne peppers, habanero peppers, summercrisp lettuce, and many other heirloom varieties. Including these Pink Beauty sweet potatoes that were freshly harvested for this recipe. A variety of sweet potato that was created specially by Neel from O’naturale Farms.
This purple sweet potato cheesecake is inspired by Urban Grow Lab and ABC Farms’ valuable message, and made with the ingredients from our shared space. From ABC Farms, we chose an acidic quark and rich cream cheese to balance with the bright purple sweet potatoes. The result is a slightly dense, creamy and tangy cheesecake.
This dish represents a healthy, nourished and vibrant lifestyle. Where growing and cooking high-quality produce with easy access is the standard.
Ingredients
200g ABC Farms Cream Cheese
200g ABC Farms Quark Cheese
180ml ABC Farms Double Cream
150g caster sugar
3-4 eggs
¼ cup flour
1 tsp Vanilla (optional)
4 Pink Beauty sweet potatoes
Recipe
-First score your sweet potatoes and roast them at 210॰C for 45-55 minutes till it turns fork tender and the skins separate. Once all the skins are peeled, mash and strain the sweet potato pulp. Keep the oven preheated to 200॰C.
-In a mixing bowl, add in quark cheese, cream cheese, powdered sugar, double cream, vanilla, and sweet potato pulp. Whip this together until combined.
-Slowly add one egg at a time and continue mixing the batter. Mix till well combined, and be careful not to overmix.
-Finally, add the flour till incorporated and pour it into a cake tin lined with two crumpled up sheets of parchment paper. Bake this for 50-60 minutes at 200॰C until the sides set, but the middle is still jiggly.
-Let it cool down and refrigerate overnight. You can top this with a pandan white chocolate ganache and toasted coconut or some chocolate sauce. Add the toppings of your choice, and your cheesecake is ready to enjoy.
