Eggs with Feta

A one-pan wonder that’s perfect for any time of the day!

Ingredients

  • 100g fetta cheese, chopped
  • 2 spring onions, finely chopped
  • 1 tablespoon chilli oil
  • 2 eggs
  • Salt and pepper, to taste
  • Sourdough bread, toasted (to serve)

Method

  1. Heat a non-stick pan over medium heat. Add the chopped fetta cheese and spring onions. Sauté until the cheese begins to soften and the spring onions are fragrant.
  2. Drizzle in the chilli oil and continue cooking until the fetta starts to brown slightly.
  3. Crack the eggs directly over the feta mixture. Cover the pan with a lid and cook until the egg whites are set, and the yolks are cooked to your preference.
  4. Season with salt and pepper to taste.
  5. Serve immediately with slices of toasted sourdough bread.

Tip: For an extra kick, drizzle a bit more chilli oil over the eggs before serving.
